About

Hello – and welcome to Vegan Insanity, my humble little home on the Internet, where I share my love of vegan cooking. On this site, you will find:

  • Vegan recipes
  • Kitchen tips & tricks
  • How-to guides for cooking & more
  • Resources for new (and not new!) vegans

My goal is to inspire you to try to include more plant-based meals in your diet. I hope to show you that you can eat healthy, animal-free food that is delicious and easy to make!

My Story:

I’m Cassie – vegan food lover and animal rights activist I live in Vaughan, Ontario, right near the big city of Toronto, with my husband, our 2 kids, 3 cats and a dog that thinks he’s a cat, too. I love to cook and share delicious vegan food with everyone I know.

After watching the documentary Vegucated back in September 2013, I switched to a vegan diet. Right then and there – and I’ve never looked back.

I’ve since watched other food documentaries, such as Forks Over Knives, Food Inc., Food Matters, Hungry for Change, and Fat, Sick & Nearly Dead – all which solidified my plans of eating a plant-based diet.

I love teaching women how to make mega bucks online, all things chocolate, pasta, potatoes, and waking up early to enjoy some quiet alone time in the morning.

On this site, I share all of my vegan recipes that I’ve made & enjoyed since switching to this way of eating. I also share cooking tips, how-to guides and resources for those that are new (and not new!) to vegan eating.

I’m obsessed with vegan food. Before switching to a plant-based diet, my relationship with food was horrible. I’d eat when I was sad, happy, bored – just looking at food would make me want to eat something. Now, I eat when I am truly hungry, and no matter what I make, I am always satisfied. Despite what many people think, vegan food can be very filling and delicious!

This Week’s Vegan Menu Plan

Every week, I create a menu plan for the week ahead. I’ve always found menu planning to be helpful, but especially when eating a vegan diet. Sometimes I forget to make one, and those weeks are just awful. I stare into the fridge and whine that there’s “nothing to eat”, even though the fridge is […]

Gluten-Free Vegan Pumpkin Scones with Chopped Pecans

Scones, anyone? What about pumpkin scones? With a delicious glaze and crushed pecans? Yes? You’re not sick of pumpkin yet, are ya? Pumpkin is still flying around my kitchen ALL THA TIMEEEEE these days and I am digging into it left and right. And these scones. They are not only stuffed with pumpkin and pecans […]

3 Ingredient Vegan Gnocchi

The first time I ever tried gnocchi was 2 years ago. I was browsing Pinterest (’cause duh, what else would I be doing with my time?) and came across this mysterious dish called “gnocchi”. Pasta made out of potatoes and flours. Pu-lease. I am too sophisticated for that. But I checked out the recipe anyway. […]

Chocolate & Coconut Pumpkin Bars (Raw, No Bake)

With a can of pumpkin in my hand, I was on a mission to make something tasty. I didn’t feel like cookies or cake or pie or fudge (WHAT?!), so I hopped on Pinterest and scoured the site for pumpkin treats I could make right here, right now. Then I got distracted by quotes. And […]

Chocolate Beetroot Dougnuts

Extra, extra! Read all about it! I put beets in my doughnuts and I’m loving every last bite of these chocolate morsels! I used to be one of those people who hated beets. In fact, just the sight of them alone would give me the heebie jeebies. My mom used to always buy the pickled […]

Mini Cauliflower Crust Pizzas with Sun-Dried Tomato Sauce

The other day I was thinking out loud and my brain forced me to blurt out “cauliflower crust pizza I need you in my liiiiiife”. And clearly if I’m thinking about a particular food, I need to make it, or my brain will not be happy. And so I obliged. I made cauliflower crust pizza. And […]
