This Week’s Vegan Menu Plan

Every week, I create a menu plan for the week ahead. I’ve always found menu planning to be helpful, but especially when eating a vegan diet. Sometimes I forget to make one, and those weeks are just awful. I stare into the fridge and whine that there’s “nothing to eat”, even though the fridge is packed full of deliciousness. It’s bad.

So – I menu plan every week (usually) to make things easier on myself. And it works. I promise.

Here is this week’s vegan menu plan:

 

Breakfast:

    The recipes look great, but realistically, there is no way a working mom is going to be able to prepare all of these meals nor afford them on a budget. I have tried. and tried. and tried. The best way to try these recipes is to stretch them. Make larger portions so you can stretch them over two dinner times and at least two single serving lunches or four serving snacks. Choose 2 or 3 recipes and try them over the week. Make a lot of one recipe (like a dinner entrée) that you can pair with a couple different side recipes. Now-a-days, groceries are SO EXPENSIVE. I shop at Walmart and 99cent stores for everything I can find before moving on to warehouse clubs where I can buy in bulk. I only go to Ralphs or Vons for specialty stuff, farmers markets for produce. If I were to buy the ingredients for all of these recipes (given that I already have a few in-house), it would probably cost me AT LEAST $400. I have a hubby and 3 kids. This might be do-able for a pair, or a single person, but not feasible for a family. Great picks though! ;^)

    Oh sorry, I was being greedy about getting the recipe and didn’t say THANKS for posting your wonderful meal plan ideas! I agree, meal planning is key. I can not put together anything on the fly. I can look at a box of noodles and a jar of sauce and spaghetti will not come to mind.

    Holy moly, that giant hashbrown looks incredible! I meal plan each week too but I only plan dinners…the rest of our meals and snacks are a bit spontaneous.

    I understand that this would be based on your pantry and where you live, but would you consider posting how much your groceries cost for you meal plans? I feel like when I meal plan just dinners alone it’s $100 a week. I feel like this is a lot for 2 people but maybe it’s not?

    With your busy family life, how do you organize meal prep? When do you meal plan and write your grocery list, and how much time prior to meal time do you begin cooking? Thanks. I struggle with getting the food on the table before I hear, “Mom, we’re starving!”
