Every week, I create a menu plan for the week ahead. I’ve always found menu planning to be helpful, but especially when eating a vegan diet. Sometimes I forget to make one, and those weeks are just awful. I stare into the fridge and whine that there’s “nothing to eat”, even though the fridge is packed full of deliciousness. It’s bad.
So – I menu plan every week (usually) to make things easier on myself. And it works. I promise.
Here is this week’s vegan menu plan:
Breakfast:

I love, love, love, love this. The way you did this is awesome. I’ll just go through these recipes and make my shopping list and I will be ready for the week. I am in the beginning phase of my health makeover, but I struggled with creating an actual menu to follow! This will make a week of eating so much easier to get through. Thank you for doing this, it is a lot of work. I will look forward to your post each monday! L
